I have a few friends that have started the KETO diet, where they are eating very few carbohydrates and a larger amount of fats and proteins. I found this lasagna recipe that uses zucchini slices in place of the lasagna noodles and it fits into their diet.

Zucchini Lasagna: Heat 2 Tbl. olive oil in a fry pan. Add 1 cup finely chopped onion and cook until softened. Add 1-pound lean hamburger to the pan and break it apart as it browns, drain. Add 15 ounces of tomato sauce, stirring it in. Bring to a simmer over medium-high heat, then gradually reduce the heat to maintain a simmer. Cook until the sauce starts to thickens. Stir occasionally. Stir in 3 tsp. dried oregano, 2 tsp. salt and 1/4 tsp. ground cayenne pepper. Remove from heat and set aside.

Slice 2 large zucchini (about 20 ounces) lengthwise into 1/8 inch strips. Arrange them in a greased 8”x8” pan slightly overlapping in a criss-cross pattern. Evenly pour about half of the meat sauce over the zucchini. Add about 1/2 cup of shredded mozzarella cheese on top of the meat sauce. Repeat with another layer of zucchini, other 1/2 of meat sauce and 1/2 cup of mozzarella cheese. Top with rest of the zucchini, another 1/2 cup of mozzarella cheese and 1/2 cup of parmesan cheese. Bake at 375 degrees about 45 minutes until the top is golden brown and bubbling. Let cool 10 minutes before slicing.

Chocolate Sale: The students at Harrison Elementary are selling The World’s Finest Chocolate to raise money for field trips and to attend educational events and school activities. The fundraiser will end on March 4. Candy will be delivered the first week of April. Contact any student or call the school at 208-689-3511 to order candy.

Driver’s Ed: Driver’s Education will be offered during the spring at Kootenai High School. The class portion will run from Mar. 4 to Apr. 12. The driving portion needs to be scheduled with A and A Driving School or other private driving school. A driver’s permit is required to register for the IDLA Driver Education Course. City Council: The Harrison City Council meeting is March 5 at 7 p.m. at the Harrison City Hall.

Quilting: The Grange Grannies Quilting Club is March 7 from 9 a.m. to 3 p.m. at the Medicine Mountain Grange Hall in Medimont.

Time Change: Daylight Savings Time begins on March 10. Be sure to turn your clocks ahead one hour.

School Board: The Kootenai Board of Trustees meeting is March 11 at 7 p.m. in room 5 of Harrison Elementary School.

Library News: The Harrison Library is open Mondays, Wednesdays, and Saturdays from 10 a.m. to 5 p.m. and Fridays from 1 p.m. to 5 p.m. They will be closed Feb. 18 in observance of President’s Day.

Book Club: The Harrison Library Book Club meeting is the last Monday of the month at 3:30 p.m. at the library.

Wed. Bunch: The Wednesday Bunch will not be meeting at the Harrison Library for March and April. If you need help with a project, fill free to stop by and ask for help.  

TOPS: TOPS, (Take Off Pounds Sensibly) a weight loss club meets weekly at the Harrison Senior Center. The club meets every Thursday with weigh-ins from 8:30 a.m. to 9:30 a.m. followed by the meeting from 9:30 a.m. to 10:30 a.m.
